Creamy Cajun Chicken Pasta

Follow this easy method:

1 Using a non-stick pan, heat the olive oil. Once heated add the red onions, mushrooms and peppers until softened then set aside.

2. Add your chicken pieces to the pan and fry until cooked through. Once the chicken is cooked return the veg you previously cooked to the pan. Stir in some cajun spice and season with salt and pepper.

3. Now add your pasta and chicken stock to the pan, cover and leave.

4. After 15 minutes stir in the cream cheese to the pan to make a creamy sauce, garnish with chopped chives then serve.
